Carrot Cake With Pineapple And Coconut


It was my first time baking in the new conventional oven toaster that hubby bought for me and it turn out fantastic. I tried the Carrot cake with pineapple and coconut and the result was the picture above. Hubby love it even my son Chris. Each of us eat two slices and we love it. Chris brought some for his lunch in school. Anyway, if you want to try here is the recipe. I found this online but i modify the ingredients since i do not like to eat very sweet too much oil and salty. Enjoy! Linking to Mellow Yellow Monday.
Ingredients:
3/4 cup vegetable oil
3/4 cup sugar
10 oz. pineapple chunk and crush it put some of the juice for flavoring
2 carrots shredded
2 1/4 cups wheat flour
2 coconut flakes
1 cup walnuts
2 teaspoon cinnamon
2 teaspoon baking soda
2 teaspoon vanilla
1/2 teaspoon salt

How it works:
Mix in a large bowl all the ingredients and put it on a greasy 9x3 pan. Bake it for 50 minutes at 400 degrees. You can chose to put a topping or not. If you want a topping you can put frost with cream cheese frosting.
